Recipe: popcorn chicken

Adapted from this recipe . 4 chicken thighs, remove skin and bones. Cut to 1 inch cubes. The chicken meat should be about 450g. Add 1 tsp soy sauce, 1/4 tsp pepper, 1/3 tsp salt, 2 cloves of garlic (minced). Mix with meat, set aside to marinate. (Claire helps here.) Mix 1/3 cup flour + 1/4 tsp salt + 1/4 tsp baking powder, add about 1/3 cup of water till thick paste consistency (see video link at the beginning). (Claire helps here.) Pour paste on chicken, mix to coat evenly. (Claire helps here.) Coat each chicken piece with coarse grain sweet potato flour.   Heat up oil to 160F. Fry chicken till light golden. Set aside. Heat up oil to 180F. Fry chicken again for about 1 minute till golden brown.  Serve.

Fish nugget

Materials 1 Swai fish fillet 1/4 cup All-purpose flour 1/4 cup Italian bread crumbs 1 egg 1 broccoli crown 1 baby carrot 1 raisin Process  Red means kids can do these steps. Preheat oven to 400F Prepare veggie: Cut broccoli into pieces Put broccoli and carrot in a pot Add water to 1 inch deep Use high flame oven top to bring to a boil Turn flame down to low and boil 7 minutes Use a strainer to take out veggie  Use scissors to cut fish fillet into a fish shape.   Crack the egg into a bowl, beat the egg Pat dry fish with paper towel Coat fish with flower, shake off excess Dip fish in egg Coat fish with bread crumbs  Grease the baking sheet with butter, place fish on it Put fish in oven, bake 14 minutes Chop carrot into pieces Assemble plate. Recipe: sesame pancake (烧饼)

Adapted from recipe  here . Make dough. Mix: 1 cup flour + 1/2 cup water + 1 TBSP oil. Cover, set aside.  Make filling. 200g Chinese radish (萝卜), shred, add 1 tsp salt, set aside to strip water. Fry 4 strips of bacon till golden brown, set aside to cool down. Chop 1 green onion, mix with 100g ground meat (beef, pork, or turkey). Chop bacon, add bacon bits to meat mix. Squeeze the water out of radish, mix with meat. Make spread. Fry 3 TBSP flour till golden. Add 3 TBSP oil to make paste. Use the rolling pin to make the dough to a rectangular 15cm X 25cm sheet.  Spread the paste. Roll the sheet up. Cut to 6 parts.  (Claire can do this.) For each part, use the rolling pin to flatten it a bit.  Add filling, squeeze to close it, shape to a ball.  (Claire can do this.) Flatten to a pancake shape.  (Claire can do this.) Meat Pancakes - Mountain Climber

Materials 1/2 cup Flour 1/4 cup Water 150 g Ground pork or beef 1/4 cup Chopped onion 1/4 teaspoon  Salt 1/4 teaspoon Sugar 1/4 teaspoon Soy sauce 1 Steamed broccoli 1 Sliced carrots (steamed if preferred) Video Process  Red means kids can do these steps. Mix flour with water, knead till the dough becomes one ball and there is no loose flour, [wash hands] . Adults may need a final check. Let the dough sit in a covered container for 30 minutes to 1 hour. Combine meat, onion, salt, sugar, soy sauce. Mix. Put plastic wraps on the working surface to reduce the messiness. Spread flour on the plastic wrap so that the dough does not stick. Take the dough out carefully - it is sticky. Cut the dough into two, and roll into two balls. Use a rolling pin to flatten the dough into a sheet in the shape of a square or a circle. If the dough gets sticky, just spread flour. Adults may help. Materials 2 Eggs 1/2 cup Cooked rice 1/8 teaspoon (a pinch) Salt 1 tablespoon Olive oil or vegetable oil 1 Banana 1 Cucumber 1 Sliced carrots 2 Raisins 1 Broccoli crown 2 Circular cookie cutters Video Process  Red means kids can do these steps. Cut broccoli into florets, put in 1 inch water, boil for 5 minutes, take out broccoli and put aside. Crack the eggs into a bowl, [wash hands], beat the eggs Add salt, [wash hands], mix Put oil in nonstick frying pan, medium high flame Pour in egg mix, stir fry Put in rice when eggs start to set, mix  Put fried rice in a bowl  Peel cucumber and cut out one long slice [Optional] Boil carrots in water for 10 minutes Cut carrot slices into different shapes for decorating.
