Recipe: popcorn chicken
Adapted from this recipe.
- 4 chicken thighs, remove skin and bones. Cut to 1 inch cubes. The chicken meat should be about 450g.
- Add 1 tsp soy sauce, 1/4 tsp pepper, 1/3 tsp salt, 2 cloves of garlic (minced). Mix with meat, set aside to marinate.
- (Claire helps here.) Mix 1/3 cup flour + 1/4 tsp salt + 1/4 tsp baking powder, add about 1/3 cup of water till thick paste consistency (see video link at the beginning).
- (Claire helps here.) Pour paste on chicken, mix to coat evenly.
- (Claire helps here.) Coat each chicken piece with coarse grain sweet potato flour.
- Heat up oil to 160F.
- Fry chicken till light golden. Set aside.
- Heat up oil to 180F.
- Fry chicken again for about 1 minute till golden brown.
- Serve.
