Recipe: popcorn chicken
Adapted from this recipe . 4 chicken thighs, remove skin and bones. Cut to 1 inch cubes. The chicken meat should be about 450g. Add 1 tsp soy sauce, 1/4 tsp pepper, 1/3 tsp salt, 2 cloves of garlic (minced). Mix with meat, set aside to marinate. (Claire helps here.) Mix 1/3 cup flour + 1/4 tsp salt + 1/4 tsp baking powder, add about 1/3 cup of water till thick paste consistency (see video link at the beginning). (Claire helps here.) Pour paste on chicken, mix to coat evenly. (Claire helps here.) Coat each chicken piece with coarse grain sweet potato flour. Heat up oil to 160F. Fry chicken till light golden. Set aside. Heat up oil to 180F. Fry chicken again for about 1 minute till golden brown. Serve.
